Pork Steak with Eggs

Mustard Rubbed Pork German Style

I picked up this recipe while stationed in Heidelberg Germany in the mid 90’s. We were traveling through the WWII Path and stopped to eat breakfast at this German families home. The wife made like 30 of these pork steaks. While I don’t see a lot of pork steaks outside of a butcher, this really can be made with pork chops if you must.

Ingredients:

  • 1 pork steak
  • 3 cloves garlic
  • 1 branch of rosemary
  • 3 eggs
  • ½ stick butter
  • Salt, pepper, paprika, white pepper to taste

Rub your steak with the seasoning and mustard and sit in the fridge for 1 hour. You can sit over night if need be.

Stick in a cast iron pan greased with butter for 3 min on each side to sear in the flavor. Add garlic and rosemary and be sure to scoop the butter to braise the pork.

Stick in a 375 degree oven for 20 min, or until the pork is done.

When the steak is almost done, in your griddle oil with butter and fry three eggs. If not making for breakfast, serves well with mashed potatoes, a baked potato, or fries.
