Goat Stew

Irish Grunt Style

I love a good goat stew. Have had it a couple of different ways from Irish style, curry style, with brown sauce, and as a chili style.

Ingredients

1 1/2 lbs. goat meat

2 cups beef broth

2 large cans tomato sauce

1 diced white onion

1/2 diced green pepper

1/2 diced red pepper

3 cloves garlic minced

3 large carrots diced

4 gold potatoes 1 inch cuts

Rosemary, Thyme, Sage

2 tbsps. flour

salt, pepper, Hungarian paprika, white pepper, adobo, crushed red pepper to taste

Brine the goat meat with seasoning and place in fridge for 1-2 hours. Cover with flour if you want a thicker sauce. On a medium heat in a large Dutch oven brown the goat meat.

Add onions, peppers, garlic and sauté

Add vegetables and seasoning mix well.

Add broth and tomatoes and bring to a boil.

Boil till meat and veggies are tender and serve.
