GRUNT Style

Ingredients:
- 4 Chicken thighs
- 2 tbsp Irish butter
- 1/2 chopped white onion
- 1/2 chopped green pepper
- 1 can diced tomatoes
- 1 1/2 cups brown sugar
- 1 1/2 cups ketchup
- 1/2 cup red wine vinegar
- 1/4 cup chicken broth
- 1 tablespoon Worcestershire sauce
- 2 1/2 tablespoons dry mustard
- 2 teaspoons paprika
- 2 teaspoons salt
- 1 1/2 teaspoons black pepper
- 2 dashes hot pepper sauce or chili peppers.
- 2 tbsp molasses
- 1/4 cup whiskey
Brine your chicken with salt and pepper, sit in fridge for 20 min.

In a cast iron pan (I am using my Smithey No 12), sear your chicken with butter. Remove chicken and add onion, green pepper, garlic, ginger and sauté (be sure to not burn)

Add ketchup, Worcestershire sauce, chicken broth, chili peppers, red wine vinegar, tomatoes and bring to a slight boil.

Add in brown sugar, dry mustard, paprika, salt, black pepper, molasses and whiskey. Mix well and let simmer for 15-20 min.

Add chicken back to pan, and place in a 375 degree oven for 30 min.

Dont throw away the left-over sauce, jar it for another day.
